Award-Winning Charleston Chef Jason Stanhope Heads to Sullivan’s Island
Big news in the Charleston food scene:

James Beard Award-winning chef Jason Stanhope is trading in downtown dining for beachside vibes. After nearly a year and a half at Lowland, the boutique hotel restaurant in The Pinch, Stanhope is stepping into a new role as executive chef and part-owner at Sullivan’s Seafood & Bar on Sullivan’s Island.
Stanhope made his mark in Charleston over 15 years at FIG, and more recently, helped shape the identity of Lowland with standout dishes like crispy quail, handmade pastas, and a celery salad that earned loyal fans. But now, he’s heading for the coast—and ownership.
“This felt like an opportunity for me to truly be in control of my own destiny,” Stanhope said. “I’m excited to take what people think a fish camp is and show them that it can evolve, like everything.”
Formerly known as Sullivan’s Fish Camp, the rebranded restaurant is owned by Wes and Betsy Fuller, Jeremy Graves, and now, Jason Stanhope. Guests can expect a thoughtful blend of fish camp classics—think expertly fried seafood baskets—and lighter, seasonal plates built on local produce and coastal flavors.
While the menu will shift gradually, the design and dining room will remain the same. “The Towills built an amazing dining room,” Stanhope said, referring to Ben and Kate Towill, the couple who transformed the space in 2022. “It’s functional, beautiful, and full of that breezy island charm.”
Stanhope's move to Sullivan’s Island is more than professional—it’s personal. He envisions his two young kids growing up in the restaurant, and his food continuing to evolve alongside the community.
Sullivan’s Seafood & Bar is expected to debut its new era this spring 2025. Locals and visitors alike will want to keep this one on their radar.
